Our family has been working in the world of Parmigiano Reggiano since 1850. It lives by Parmigiano Reggiano. Our family, in Italy and in the area of origin, started the process of selection of Parmigiano Reggiano. Our family started shipping abroad and beyond the Atlantic.
All Parmigiano Reggiano DOP has always and strictly been produced in respect of the disciplinary code of the Consortium. But our Parmigiano Reggiano, Parma Parmesan, is further carefully selected.
We believe that our Parmigiano Reggiano is the best on the market, not only for its intrinsic and organoleptic characteristics but also for its taste, smell and aroma. Our opinion is strongly supported by our clients, among which are some of the best restaurants worldwide and even some of the best chefs that choose our Parmigiano Reggiano for their domestic consumption!
We know the grass that the cows eat, we know everything about the surrounding fields. We know what water they drink, of what source, stream or river. We know the geology of the lands, their chemical composition. We know the microclimate of the meadows where the forage of our favorite cows grows.
We know the conditions of our cows and we are always in contact with the vets that take care of them.
We know where the barns are, we know the farmers and we know the owners and the managers of the dairies that produce our cheese.
We check the production and the ageing of our Parmigiano Reggiano on a daily basis. Sometimes we change dairy but most of them have been with us from the beginning. Best quality and consistency are our creed. We will never give up these values.
